Jicama Salad

This was delicious, and I just threw together some items I already had chopped up.

In the mix: Approx 1 cup chopped jicama, 1/2 cup chopped strawberries, 1/4 slivered carrots, 1 small box or 3 tablespoons golden (or regular if you don't have golden) raisins, juice from 1/2 lime. Mix mixture sit for a few hours in the fridge for better flavor, then enjoy!

Country Run

Was out in the country this weekend at my mother in law's house and went for a beautiful run Sunday. First longer run in several weeks, went 4 miles in 45 minutes. Felt good! I was worried about dropping energy levels when I work out due to the raw food diet, but I felt great! She had stocked her house with all kinds of fruits and veggies which was super nice. I even got fresh from her garden Brussels sprouts for my salad. Tasty!

Killer and Chico went with us. They got spoiled with all kinds of treats, table scraps, and toys. Killer is still afraid of their cat, Jefferson.

New Recipes

Moroccan Cantaloupe and Carrot Salad

about 1 cup carrot thinly sliced, 25 grapes sliced in half, 1/2 cantaloupe cut into small pieces, juice of half a lime, 1/3 cup sliced almonds, cardamon to taste

Amazing Pear, Ginger, and Orange Green Juice

2 overripe Bartlett pears, 2 peeled clementines, about 1/2 inch peeled ginger, 1 large handful of raw spinach, 5-6 ice cubes, 1/2 cup water, blend until smooth

Started feeling the afternoon slump so I made a GIANT green smoothie in a bowl (SAIB) and topped it with a few sunflower seeds. In the mix: peaches, banana, water, ice cubes, and about 3 big handfuls of spinach. Yummy!!


So, I have been MIA for a while and I am trying to get back on the boat. I have still been exercising but I just haven't had the groove for blogging about anything. After a few months of trying to bust a weight plateau my trainer has decided to have me try a raw diet for 2 weeks. Today is day 2. I will try to upload photos as I come up with new combinations. I just sat down to a plate of kale that I ran through the juicer saved the juice for a smoothie later today. I topped the kale with a LOT of lemon juice and some fenugreek powder ( I have been eating dried spices/herbs to add flavor) and some sea salt. I am feeling pretty good today, yesterday afternoon I hit a major slump and just never felt awake. I was actually down 2 pounds today?? Not sure where that came from but I will take it. Curious to see how this goes. Not planning on changing up my workouts during this time period, just maintaining and changing my diet.

Happy valentine's Day

Clay and I had a lazy Valentine's Day. We had plans to go to Outback but it was covered up with people so we opted for Papouli's Greek and were only the 2nd couple in there. Tasty tasty! After a gyro and some lemon potatoes we headed to Big Lots (so romantic right?). Then we headed home to watch our shows. We did take a photo to remember the evening by. I thought it was funny that Clay was wearing the same shirt that he wore in our photo shoot together. Clay gave me a super thoughtful present (a star named for us). Awwww!
