Raw Again

I am starting on a 2 week raw vegan diet again today. I am much less apprehensive this time since I know it can be done and it really isn't that hard to do. For my first meal I threw together a delicious fruit salad. In the mix:

1 sliced banana, 5 sliced large strawberries, about 10 blackberries, 1 small sliced pear, about 10 green grapes sliced in half, then topped with 1 tbsp chia seeds.

Jicama Salad

This was delicious, and I just threw together some items I already had chopped up.

In the mix: Approx 1 cup chopped jicama, 1/2 cup chopped strawberries, 1/4 slivered carrots, 1 small box or 3 tablespoons golden (or regular if you don't have golden) raisins, juice from 1/2 lime. Mix mixture sit for a few hours in the fridge for better flavor, then enjoy!

Apples and Snickers

Another tasty internet find! Thank you Pinterest.

Super easy! First add green apples, although I think that I would prefer gala or Fuji, as much as I like tart things, I like my apples sweet. Then, cut up Snickers bars, and cool whip.

Easy Egg Drop Soup

I whipped up some soup on this chilly morning. It took me all of 15 minutes. This makes 2 large servings or 4-6 appetizer servings.

4 cups water brought to a boil
added 4 tsp "better than bouillon" beef soup base
1 tbsp soy sauce
1/3 cup chopped yellow onion
1 cup leftover cooked cabbage (could use canned greens)
cook all until a rolling boil then
2 eggs, stir in one at a time until cooked

Delicious!
