Early Morning Recipe Experimentation

A little hungry this morning and wanting something warm and sweet. Mixed about 1/4 cup whole wheat pancake mix, 1/8 cup uncooked quinoa, 1 banana, 1 egg, a dash of vanilla and butter extracts, 1 tbsp each of poppy seeds and chia seeds, juice and zest of 1/2 a lemon (think I will use a whole lemon next time since they weren't as lemony as I would have liked) mix all items and mashed banana then cooked the whole whole thing like a giant pancake. Yay for happy tummy!

Earlier tonight I tried Moringstar Farm's buffalo Chik-n bites which were surprisingly good but did need a little extra sauce in my opinion. Paired that with some carrots (which I also dipped in the buffalo sauce) and some olive oil lemon feta hummus chips.




These things are soooo good!!!

Strange Walking Partners

I came around the corner on my 4.3 mile walk/jog around the very HILLY neighborhood and saw what I thought was a pair of fake geese by the road. I quickly realized that I was mistaken and the geese hurried ahead of me into the road as if they were racing me. This is a new one for me. Had a wonderful time out in the SUNSHINE this morning! It was the perfect temperature. Cherry trees, pear trees, forsythia, daffodils, TULIPS *my favorite, and all sorts of other springy plants entertained me today.

More grocery goodies. Excited to try the cassava chips flavored with KAFFIR lime!! Also, I got some chips made from lentils and chick peas and flavored with cucumber dill, I couldn't wait and have already tried them...pretty darn tasty!

Breakfast this AM, shredded wheat, raisin bran crunch, banana, and chia seeds with almond milk. Good way to start the day even if my banana was a little overripe.

Goodies from Harry's

Here is some of the loot from our trip to HARRY's FARMERS MARKET. I have been keeping a mental tally of items that I wanted to try. I have been enjoying Caitlin's blog (Healthy Tipping Point) so much and she has raved about Justin's nut butters so that was a must. Also, I have been itching to try CHIA seeds since seeing them online, I had never heard of them before but I love poppy seeds and the crunch to a fig newton and strawberry/blackberry jam so I am betting I will love them too. I know for me one of the keys to maintaining healthy eating patterns is VARIETY. I love to try new foods so this is EXCITING for me!

The sparkling pineapple hibiscus drink was an impulse purchase and it hit the spot!
